Curd is suitable for any fat content, the main thing is that it should be of high quality, without vegetable additives. Rinse the eggs well with a suitable detergent and dry them. This will help get rid of dirt and bacteria on the surface of the shell. Carefully separate the eggs into whites and yolks. In a bowl with whites should not get the yolk, otherwise the whites will not beat. It is better to break the eggs one by one into a separate bowl, and then pour the whites into a common bowl. The bowl itself should be dry with no traces of grease.
Combine the cottage cheese with the yolks and sugar. Beat the mixture with an immersion blender or mixer. If the cottage cheese is curd-like, you can rub it through a sieve beforehand. Soft cottage cheese in briquettes can be simply stirred with a whisk.
